Stumbled over this website which has some interesting quotes (not only about dreams):
Some informal categories:
sanity (or the lack thereof):
"Dreaming permits each and every one of us to be quietly and safely insane every night of our lives." William Dement
"I am accustomed to sleep and in my dreams to imagine the same things that lunatics imagine when awake." Rene Descartes, "Meditations on First Philosophy"
humor:
"Dreams are free therapy, but you can only get appointments at night." Grey Livingston
"I think we dream so we don't have to be apart so long. If we're in each other's dreams, we can play together all night." Bill Watterson, Calvin & Hobbes
sex:
"Recall the old story of the rather refined young man who preferred sex dreams to visiting brothels because he met a much nicer type of girl that way." Vivian Mercer
and lastly,
"Dreams say what they mean, but they don't say it in daytime language." Gail Godwin
Food for thought (thankfully, no uncooked french fries. . .)

I'm struck by the Descartes quote. It reminds me of Shankara, a Hindu philospher, who argues that (unlike Descartes) our life is actually dream. Reality is a dream that exists, yet we interpret it incorrectly. His analogy is a piece of rope that one takes for a snake. The snake is very real in our perception and misinterpretation. Only when we correct our interpretation can we see the rope. Shankara says this is our life, a dream misinterpreted.
